Shepherd's Pie

Tonight I made Shepherd's Pie for the first time. This was super easy and super tasty!  I meant to take a picture because it was beautiful, but alas, I forgot. 

Heat oven to 350 degrees!!!

First:
Boil six red potatoes as you would to make mashed potatoes...peel and cut, then boil.  You can use any type of potato; I just like the flavor of the red. 

Step two:
Cook 1lb of ground beef with a half of a grated onion and salt and pepper to taste.  Add a cup of frozen mixed vegetables (carrots, peas, corn, etc.) when beef is nearly done. 

Step three:
Make a gravy by heating 1 cup of beef broth and adding 2 or 3 tablespoons of flour when broth comes to a boil.  Add flour slowly and through a sifter for best results.  Whisk quickly to avoid lumps.  When thickened add to beef mixture.

Step four:
Make mashed potatoes by adding a tablespoon of butter, 1/4 cup of milk and 2 tbls of sour cream to drained potatoes.  Mash.

Step five:
Assemble.  Take a deep dish pie plate and put beef mixture on bottom.  Cover with mashed potatoes.  Sprinkle Italian seasoning lightly on the top for an earthy flavor.  Place in oven and cook for 30 minutes or until potatoes are light brown.

Enjoy with red wine!
