Turkey Burgers

So one of my favorite meals is turkey burgers. Jennio sells 100% white meat turkey burgers that can be found at Sam's Club. These have a wonderful flavor and only take a few minutes to prepare. I cook them on an outside grill when I can, but otherwise I use the George Foreman. Top with your favorite hamburger toppings. I like to make a nice green salad to go with them. Try Ken's lite Olive Oil Vinegarette. It goes well with the fresh mozzarella, avocado and tomatoes I like to add.

Chicken Enchiladas

So today's meal is one of my favorites. The ingredient list is as follows:
Rice
Can of refried beans
1 cup picante sauce
2 cans of enchilada sauce
10 corn tortillas
8 oz Monterey Jack Cheese
Left over chicken from Crock-Pot Chicken

1. Cook rice according to directions on package. Make enough for tonight and 1 cup extra for tomorrow's meal.
2. Put 1/2 cup enchilada sauce in the bottom of 8x8 pan. Slice cheese into 10 slices and grate the remaining cheese. Roll 1 slice of cheese and some shredded chicken in one corn tortilla. Place in pan. Continue until cheese and tortillas are all rolled. Pour remaining sauce over the top. Throw on grated cheese. Bake at 350 until cheese is melted and dish bubbles.
3. Heat refried beans in nonstick pan.
4. Remove half of the rice and save. Pour 1 cup picante sauce over the remainder and mix in well. Now you have Mexican rice.
Sit down with a Corona and enjoy your dinner!

Crock Pot Chicken

If you don't have a Crock-Pot, go buy one now. It will save you tons of time and is incredibly versatile. Today, I put a whole chicken in the pot added a bit of salt and let it cook for several hours. After it was finished I pulled it out and pulled all the meat off of the bones. This will provide plenty of meat for three separate entrees. I put all the bones and eight cups of water back into the pot. This cooked cook for another three hours. Afterwards, I strained the broth and put it into plastic containers. Now I have my own chicken stock.

For dinner tonight I made chicken tacos. Super easy and can be made to your preference. I used fresh white corn tortillas, heated in a nonstick pan. I added chicken topped with Monterey Jack cheese, lettuce, tomato, sour cream and salsa. Normally I would also add guacamole, but I didn't have a ripe avacado. So I had my protein, carbs and veggies all in one. This dinner took me all of about ten minutes. Not bad!

Single and Often Hungry

As many of us are, I am a busy, single professional who loves to eat well but don't have a lot of time to devote to cooking. The worst is coming home from a long day at work, opening the refrigerator and realizing I have nothing to eat. My plan is to blog about my favorite easy meals in hope of helping others like me. Most of the food will be main dishes as I usually have little time for baking. They will be meals that can be frozen and pulled out for use on the crazier days.
